Oatmeal for the Soul

Hi friends!

Sorry I haven’t been around as much as usual.

..I’ve been in an epic battle.

With my computer, that is.

For some reason, it’s decided to misbehave like NONE OTHER and I’ve been on the losing side of the argument.

I’m trying to get it back up and running as normal ASAP!!

I have two surprises before I go though..

OATMEAL RECIPES!

Sugar Cookie Oatmeal

Yummy yumyumyumyum.

1 serving oatmeal (1/2-2/3 cup dry)

1 cup almond milk

1 cup water

1/2 cup vanilla greek yogurt

1 tbsp chia seeds

1 tsp vanilla

Sweetener of choice

Make your oatmeal with the almond milk and water mixed together. Near the end of the cooking process, add in 1 tsp of vanilla and about 3/4 serving of sweetener (I use about 5 drops of stevia). Turn off the heat and add the greek yogurt and chia seeds. Mix it all together!

Transfer it to a bowl and let it thicken for about 5 min.

Top with half a tablespoon of honey or maple syrup and enjoy! If you don’t want to use the honey/maple syrup, just add more sweetener to your liking. 🙂

Crazy Mocha Oatmeal

That ghiradelli square really made this oatmeal..

1.5 cups coffee

2/3 cup oatmeal

2 tbsp cocoa

1/2 cup vanilla greek yogurt or almond milk

Sweetener of choice

Cook the oatmeal in the coffee as you normally would. Then, add in the cocoa near the end of the cooking process. Mix in the almond milk or greek yogurt at the end along with your sweetener and ENJOY!

When you put ghiradelli on hot oatmeal, it turns into an awesome chocolate puddle. NOM.

FOOD AWARDS!

Hello friends!

Welcome to.. The first (not)annual FOOD AWARDS!

The super-awesome Alexandra nominated me to do Food Awards. She’s so awesome! 🙂

(For some reason, WordPress is being VERY weird about this post, so sorry for the lack of breaks.. I’ll try to fix it later but I’m busy right now!)

Chobani Vanilla was my post-run snack today. 🙂

This was a tough one, cause we had some POWERHOUSES in the food world. But, I just can’t get over how Greek yogurt can be FEATURED in many different types of food, not just hidden (like tofu and spinach in smoothies). It’s an easy condiment, main dish, dessert.. I’ve put it in EVERYTHING.
Best Nut
The nominees:
1. Brazil nuts
2. Walnuts
3. Almonds
4. Cashews
The winner:
Walnuts!

I like walnuts in baked goods the best!

All nuts are good for you (in moderation, unfortunately..), but walnuts are the only nut that have alpha-linolenic acid, which is an omega-3 fatty acid. Those are good for us! Also, for athletes, walnuts have anti-inflammatory compounds. My favourite nut, cashews, are a close second.
Most Delicious Gluten Free Carb
The nominees:
1. Sweet potatoes
2. Rice
3. Oats
4. Winter squash

It’s a tie! Sweet potatoes AND oats!
Okay, so I’m obsessed with oats (I’ve seriously had two bowls today), but sweet potatoes are delicious carbs too. Most awesome thing? Combining the two. (Like in this recipe!)
Best Snack Food

4. Bananas and nut butter
The winner:
Chocolate.

So.. This isn’t really a competition. NOTHING beats chocolate.

I love this stuff waaaay too much.

It’s ADDICTING. But it’s kinda hard to spread because it separates like crazy. So, I eat it out of the jar! IM Healthy Soynut butter is a delicious spreadable peanut alternative, though.

Also, I PROMISED (myself) I would post a recipe.. So, here is my favourite quick dessert recipe! Sorry it’s a bit rough, but I’m not a measurer.. Experiment as you like!
High Protein Pudding

Pudding with a cupcake.. Tbh, I didn't exactly know what to call it (pudding ice cream?!)!

**this makes a LARGE serving.. so halve it if you want, I often do!**
1 cup greek yogurt
1/2 cup almond milk or water
2 tbsp instant pudding mix
Suggested toppings: sprinkles, nut butter, chocolate chips, nuts, cereal
Whip together the liquid and greek yogurt until you’ve incorporated some air. Then, whip in the pudding mix.
Cool in the fridge for about 20 minutes.
Top and enjoy!
This is like.. Delicious. You MIGHT have to experiment a bit with proportions based on the flavour of the pudding mix. I made this with chocolate, and I added a little bit (1-2 tbsp?) more water than stated after-the-fact. It’s all a game! If you use normal yogurt for this, I would halve the liquid used, or see how it works without it at all. I add liquid to this because the greek yogurt is so thick.. Plus almond milk tastes good (I use water if I’m out of almond milk), and more volume = more deliciousness!
For chocolate pudding, I add 1tbsp of cocoa powder to up the chocolate factor. And for vanilla, I add a little bit of vanilla extract. The butterscotch version of this is REALLY good.
..And I’m off to enjoy some chocolate “pudding” while watching Mr. Popper’s Penguins with my mom!

Fears (Paranoia) and Safety

Hey friends!

All of the crazy stuff that’s going on in my life has gotten me SUPER stressed out. Which makes me paranoid, apparently. It all starts with the fact that I live in the middle of nowhere, and typically run on back roads with no sidewalks, no people, nothing really. Occasionally, I’ll see a car, or a bike rider, but the roads are PRETTY BARREN. Sometimes, I get really freaked out randomly because of a strange car parked in the woods, weird noises, or general craziness and I’ll be convinced I’m going to die. Sometimes, my runs turn into survival missions in my head.. Which sucks. This happened the other day, but was triggered by some guy driving past me a few times and then stopping to ask me where a park was. Let me just say this FREAKED. ME. OUT. It was on the first mile of a four mile run, and I just had to keep going because I didn’t want to go back the way he was, and I didn’t have my phone on me to call my mom.

Stranger danger. Srsly.

On the run, I ran suuuuper slowly around the few houses I knew, and sprinted the rest. At one point, I saw a similar car to his and proceeded to leap in the woods. I will admit I also started crying at this point.

I’m not usually this paranoid I think, but this really freaked me out because I’m so stressed out and crazy about everything. Also, I watched something on the news about girls who just disappear.. Scary stuff. I had blocked this out of my mind, but it does happen, and I don’t want it to happen to me.

Yesterday, I was still freaked out about it, so I made my mom take me to a nearby town to run. After 6.5 miles, I was feeling okayish, but went to call my mom to get me, and she didn’t answer. This caused another freak out which ended horribly.. Basically, I called my mom’s best friend and she said I sounded so scared that she came and got me.

Errr, awkward.

After yesterday’s run, I felt pretty bad. I didn’t understand why I was being so paranoid, and I wanted to be able to run in my normal neighborhood again, where I don’t have to come get my mom to pick me up and be in a strange place. I just wanted normalcy and to not have to worry so much.

Today, I ran my four mile route near my house.

I altered it a bit, so that I actually ran half of my normal 8 mile run, instead of my normal 4 mile run. Usually, I run out to a point and back, but this has been really freaking me out safety-wise. I also brought some mace with me, and remembered to bring my phone.

Oy.

Obviously, I lived. I did get freaked out at one point, but I pulled through it.

I’m still wary after that incident, and I don’t think I’ll be running my normal routes as often as I used to anymore, and definitely trying to change up my schedule more.

Tomorrow, I’ll be running on established running paths, which I’ve done before and feel pretty safe on. But, I’m glad I faced my fear. I think it’s a pretty legitimate fear, but at one point I was paralyzingly scared to go on my run, so I almost just didn’t. I don’t want to live my life like that.. And I hope you don’t either!

Just as a little note girls, it’s okay to be cautious! Unfortunately, there are weirdos out there. 😦 Always bring your phone with you on your runs, and never go out without telling someone.

Anyways, let’s get to the best part of this! I invented a new oatmeal this morning:

Craving this.. Now.

Almond Joy Oatmeal

1/2 cup oatmeal

1/2 cup greek yogurt

2 tbsp cocoa powder

1 tbsp shredded coconut

4 drops stevia

2 drops almond extract

Optional: Chocolate syrup

Make your oatmeal with water, but make it SUUUPER thick. Then, transfer to a bowl and mix in everything except for the coconut. Top with coconut and a pretty chocolate drizzle! Enjoy!

I also made chocolate coconut flour greek yogurt ice cream..

I promise it tastes better than it looks.

Which was delicious and enjoyed while watching Horrible Bosses, which was an absolutely hilarious movie. Recipe for this may be up soon, once I perfect it!

PS.. Tomorrow is my last day of being a teenager. GASP.

When I’m sad, I make fudge.

Hey friends.

On Wednesday night, something unimaginable happened. My grandma died.

First reaction: cry. In my room. For hours.

Second reaction: be “strong”. Go to class in the morning. Make arrangements to go home for the funeral.

Third reaction: Cry more. Skip second class of the day. Kick my ass at the gym.

Fourth reaction: Go to last class of the day. Make fudge while listening to “Ni**as In Paris” (Kanye and JZ) on repeat.

I’m still sorting it all out in my head, but I’ve tried to focus on my work. The funeral is on Wednesday, so I’m leaving on Tuesday. That’s the first day of finals week. Lol. I have so much work to do. More specifically, 2 10 page papers, a project, and a really hard exam.

When I’m super stressed out, I have the urge to make something. It’s soothes my mind. The result?

Peppermint Bark Fudge

1 can of chocolate frosting

1 and a half cups chocolate chips

1/2ish cup crushed candycane + extra for the top (if you want)

3 tbsp cocoa powder

1/2 – 1 tsp peppermint extract

Melt your chocolate chips.

Mix melty chocolate goodness with frosting goodness.

Mix in cocoa powder, extract, and candycanes.

Press into a sprayed pan, sprinkle on candycane topping, and let set in the fridge for at least 30 min. I broke mine up and put it in a ziploc container to store.

This morning, I went on a five mile run. It felt great. I refueled with mocha oats.. And that recipe will be posted sometime soonish. I gotta get back to studying! Just thought I’d tell you guys where I’d disappeared to.
