The Taste of Purple

Hey friends!

So, as expected, I am HOME as I write this. Yayyy! It feels great to be home, especially because I’m rocking brand newsies really warm and fuzzy pajama pants and eating nut butter with a spoon watching movies!

This morning, before I left campus, I ran 3 miles in the COLD. It was frigid and WINDY. Worst. Idea. Of my life. I thought it was a great idea, but when I reached the flat desert-like plateau (my run goes up a hill, runs on top if it, then goes back down.. and I do that twice), I was blasted with wind. And I hated cheery, warm me from earlier who woke up at 6:30 and said, “It feels like a great day to run! πŸ™‚ Life is rainbows and sunflowers!!” At one point, I was fighting so hard against it I literally almost was blown over. It was SO dramatic. When I got back and warm, I felt like I’d really accomplished something, so it was okay. And I was quickly off on a 7 hour journey home from NY to MD.

Unfortunately, on the road, there isn’t much to eat for a gluten free/lactose free college student. And, stupidly, I ran out without grabbing more than just the two oranges in my backpack. Soooo, the journey was a hungry one for me. When I got home though, I was greeted by some funny white potato-looking things..

Which my mom claimed to be sweet potatoes. I called her a liar, and she told me they were purple inside. I called her a double liar, and cut some open to stuff in the microwave. What did I find? PURPLE. (Sorry, no picture of this because I was STAAAARVING!) And when I microwaved them? THEY TURNED MORE PURPLE. Uh, hello magic food.

I ate these funny purple potatoes with a mass amount of greek yogurt and honey. It was delicious.

Aren't they great?! They made such pretty food! πŸ™‚

Then, I had broccoli with nooch and several dips of almond and cashew butter. Aaaand.. I’m just about ready for more food. I have to make up for lunch! (PS, I did have breakfast before I left my dorm.. So I’m not a completely starved college student)

Anyways, being home is AWESOME! We’re fixing my oven tomorrow, and going to the Natural History museum to look at rocks! WAHOOO! Look for a post.. Subject undetermined πŸ™‚

  1. Purple sweet potatoes?!?! DUDE that’s freakin awesome! I’m a fiend for anything sweet potato, so I totally want to find these now. I wonder if it’d diminish my orange hue haha πŸ˜‰

  2. ahh windy runs are EPIC!! honestly it sounds silly but wind is my LEAST favorite weather to run in…I’ll take snow, cold, rain, thunderstorms, excessive heat, a nuclear explosion…all over wind lol. And purple sweet taters are the BOMB! Have a fantastic time at home!! coming home on breaks from college is the absolute best πŸ˜€

  3. Running in the cold and wind is not fun at all. But afterwards I feel so accomplished! I was surprised the first time I had a purple potato. I expected it to taste like a sweet potato but it wasn’t very sweet at all!
