Today, I have some AWESOME PUMPKIN RECIPES for you for fall. These were both consumed today (I finally opened the can of Libby’s), and are deeeelicious.
1 tbsp chia seeds
1/2 cup oatmeal
1.5 cup milk or water (for high protein option, use 6 oz greek yogurt and 1 cup water)
1/2 cup canned pumpkin
1 tbsp honey
1 packet stevia (1 serving)
Lots of cinnamon
A little salt
1. Cook oats and chia on stove with liquid for 5-8 min.
2. Add pumpkin and stir in. Let cook for 1 min.
3. Remove from heat and stir in honey, salt, cinnamon, and stevia.
Pumpkin Peanut Butter
2 tbsp canned pumpkin
1 tbsp peanut flour
2 tsp cinnamon
3 drops liquid stevia (1/2 serving)
1 tsp vanilla
This recipe is super easy.. Mix it all together and enjoy!!
Coincidentally, both of those were snacks of the day. Put the pumpkin butter on a rice cake with peanuts and dark chocolate chips, and the oatmeal was the same as the recipe. Hope you enjoy!!
